| Basil Vegetable Quiche This tasty and light quiche has zucchini, sweet peppers, mushrooms, onions, basil and Swiss cheese. Great for a light supper. Teriyaki Noodles with Tofu and Stir-Fried Spinach Udon or whole wheat noodles tossed with a delicious soy-ginger dressing and topped with sesame seeds. Quinoa Stuffed Bell Peppers (Vegan) Fresh red bell peppers stuffed with quinoa, mushrooms, corn, onions, garlic and tofu, flavored with soy sauce, sesame oil and cilantro. Cheese Enchiladas in a Green Sauce Spinach, green onions, cilantro and chilies give the sauce its name--and lots of flavor. Topped with cheese and sour cream. Served with Spanish rice. Vegetarian Lasagna Spinach, sweet red peppers, onions and garlic with Ricotta, Mozzarella and Parmesan cheeses with béchamel and marinara sauces. Spicy Tofu with Broccoli and Cashews (Vegan) A spicy vegetarian stir-fry of tofu, broccoli, cashews, ginger and green onions. Served over steamed white or brown rice. Pasta with Putanesca Sauce (Vegan) An assertive fresh tomato sauce with eggplant, mushrooms, black olives, basil and capers. Served over spaghetti (whole wheat, if desired). Szechwan Eggplant and Tofu (Vegan) A spicy-hot eggplant and tofu stir-fry, served over white rice with scallions and cilantro. Baked Eggplant Parmesan Eggplant slices breaded and layered with Mozzarella and Parmesan. The eggplant slices are baked instead of fried to save calories and fat. You won’t be able to tell the difference! Split Red Gram Dal (Vegan) Split red gram (also called Tuvar Dal in India) is cooked this way in Gujarat.
